Stuffed Peppers

Ingredients

  • 2 Bell Peppers, cored and halved (I use orange and yellow, they have a sweeter flavor compared to green.)

  • 1/3 finely diced medium Onion, I use a White Onion

  • 1/2 cup pre-made multi-purpose meat, recipe here

  • 1/4 cup finely diced Bell Peppers (Green Bells are good for this because of their earthy flavor profile.)

  • 1/4 cup grated cheese

  • 2 tablespoons olive oil


Hardware

  • 1 medium skillet

  • 1 non-stick backing dish


Directions

  1. Pre-heat oven to 350° F

  2. In a pre-heated skillet, on medium heat add the olive oil. At the smoking point add the diced onion and diced bell peppers. Cook down until onions have caramelized and peppers have become tender.

  3. Add multi-purpose meat to skillet containing the caramelized onions and peppers. Reduce heat, keep in skillet until meat has warmed. Remove from heat when meat is warm.

  4. Place halved Bell Peppers on a non-stick baking sheet with the pepper's skin down ( the internal cavity should be facing upwards). Using a spoon, stuff each half of the peppers with the meat, onion, pepper mix. Top each pepper half with a pinch of shredded Cheese.

  5. Bake stuffed peppers in pre-heated oven for 8 minutes, or until cheese has melted. Remove from oven, let sit 2-5 minutes.

  6. Enjoy!
